Grilled Salmon with Oriental Garnish

INGREDIENTS (per person)

  • 1 piece of fresh salmon (approx. 180 grams)
  • 100 grams broccoli, sliced lengthwise into florets
    (if using broccoli shoots, leave them whole)
  • half a finely chopped onion and clove of garlic
  • 75 grams noodles
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • pepper and salt
  • 2 teaspoons black or white sesame seeds
  • ice water

PREPARATION

Remove the salmon from the refrigerator 1 hour in advance so that it can come to room temperature. Pat the salmon dry and rub with a little oil. Place the grill pan on the heat and let it get very hot. Preheat the oven to 120 degrees Celsius. Bring a pan of water to a boil and add salt. Divide the broccoli into small florets.

COOKING

Blanch the broccoli florets in the boiling water until they are al dente. Remove from the water and immediately cool in ice water. Then cook the noodles according to the instructions on the package and cool them in ice water. Now grill the salmon for 2 minutes on each side until it has nice grill marks. Let the salmon rest in the oven for 10 minutes at 120 degrees Celsius. Heat some oil in a wok pan and add the onion and garlic. Sauté for a few minutes over high heat and add the broccoli. Finally, stir in the noodles. Just before serving, drizzle with soy sauce and add some pepper and salt. Place the salmon on the bed of noodles, garnish with some broccoli on top, and finish by sprinkling some white or black sesame seeds over it.

Variation Tip:

This dish also works great for the barbecue. Prepare the recipe, but let the noodles with the mixture of sautéed onion, garlic, and broccoli cool down and serve as a lukewarm salad. Grill the salmon on the barbecue and serve it with the vegetables.
